google soldering station and pick one that has a desoldering tool ... ie what you just watched
they are quite expencive but have variable heat soldering tool, desoldering tool and make your work so much better

That's liquid flux. Not always necessary, but it can help to transfer heat and also reduce the surface tension of solder to help it flow.
