It is a poor way to clean joint, Get a damp rag or cloth whichever, heat joint and wipe and you'll see, if you had done this after making the joint, then there would be no need for the extra work, Just try what I mean,
from a union pipefitter, Also you got a little water?? stuff the pipe with bread, a 1/2 slice is about enough for 3/4" pipe, Give it a try, Only thing to lose is a couple minutes, but you gain some good exp,

Do not do this.........you're bound to flush most of the solder out of the joint, overheat the joint making it soft and weak, and never use water on a hot joint as it doesn't allow the solder time to re-solidify strong. Use a dry rag and flame, sparingly. Above all, NEVER attempt to dissasemble & refit old joints as you will not be able to clean & prep the joint as new and it will be unreliable..... new fittings are cheap. Remeber, a water system is only as strong as its weakest joint

So if you all disagree? why is this then rated with 4 stars? I'll try to down it a littlebit, untill the Mr Sweat comes clean with some proof his method doesn't affect pipe performance (leakages, less pressure etc.)

As pointed out below this guy is a REAL hack. If you follow his poor instructions you will have a high percentage of failed or going to fail shortly joints. Check out other how to sweat copper videos on You Tube (like Tony the plumbers video).
